Whether you enjoy a traditional Easter dinner of ham and hot cross buns or you’ve started new traditions of your own, try these adding these dishes to your Easter table. We guarantee every-bunny will love love these egg-straordinarily tasty and festive recipes!

Beet Pickled Eggs
Ingredients:
24 hard boiled eggs, peeled
2 20-oz. cans whole beets
2 cups sugar
2 cups vinegar

Directions:
In saucepan, mix the sugar, vinegar, and beet juice, and bring to a boil. Add beets to this mixture and simmer 2 minutes. In gallon glass jar, add 1 dozen shelled eggs and 1/2 of the beet mixture, then the other dozen eggs and beet mixture. Seal and refrigerate at least three days.

Peanut Butter Eggs
Ingredients:
2 eggs, beaten
1/8 tsp. salt
2 cups peanut butter
5 cups powdered sugar
1 tsp. vanilla
1 1.55-oz. Hershey chocolate bar
1 6-oz. package chocolate chips

Directions:
In a large mixing bowl, combine the eggs, salt, peanut butter, sugar and vanilla until it takes on a doughy texture. Form the peanut butter dough into egg shapes, using about two tablespoons of dough for each “egg.” In a double boiler, melt the chocolate bar and chocolate chips. Using a large slatted spoon, dip the egg shapes into chocolate mixture. Place on waxed paper and allow to cool.

Meringue Bunnies
Ingredients:
2 egg whites
1/8 teaspoon cream of tartar
1/2 cup sugar
2 oz. pink melting wafers
2 oz. chocolate melting wafers

Directions:
In a mixing bowl, beat the egg whites and cream of tartar at medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating at high speed until stiff peaks form. Transfer to a plastic sandwich bag and cut a small hole in a corner of the bag. On a parchment-lined baking sheet, pipe the meringue mixture into bunny shapes about 3”-4” inches tall. Bake at 225° F for 1 1/2 hours. Allow to cool on a wire rack. In a microwave safe bowl, heat the pink wafers at 50% power for 30 second increments, until completely melted. Stir until smooth. Place the melted candy in a plastic sandwich bag and cut a small hole in a corner of the bag. Pipe pink coloring into the inner ears of the meringue bunnies. Repeat this process with the chocolate melting wafers to paint on whiskers, noses, mouths, and eyes.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
