Shrimp: Small in Size, Big on Flavor!

Shrimp, Feta and Dill over Pasta
Ingredients:
12 ounces spaghetti or linguini (3/4 box)
1/4 cup plus 1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
Kosher salt and black pepper
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
3/4 cup crumbled Feta
2 tablespoons fresh dill, coarsely chopped

Directions:
Cook the pasta according to the package directions. Drain and return to pot. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, tossing occasionally, until opaque throughout, 3 to 4 minutes. Stir in lemon juice and zest. Add shrimp, Feta, and dill, the remaining 1/4 cup of oil, and 1/4 teaspoon each salt and pepper and toss to combine.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
