Gingerbread Muffins
Ingredients:
1 egg
1/4 cup applesauce
3 tablespoons vegetable oil
1/4 cup molasses
1/2 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon ginger – more to pump up the volume but careful not to overpower!
1/4 teaspoon nutmeg
1/2 cup boiling water
Sugar for sprinkling
Directions:
Preheat oven to 350. Grease a tin yielding 12 muffins or line with paper muffin cups.
In a medium bowl, beat egg, applesauce, oil, molasses and 1/2 cup sugar. Combine dry ingredients in another medium bowl and add to first mixture.
Stir in water, mixing well. Fill muffin cups two-thirds full. Lightly sprinkle with sugar. Bake for 20 to 25 minutes or until done.

Would love to substitute honey for the sugar and to use a lemon sauce instead of the orange. My grandmother used to serve gingerbread with lemon sauce. Yum!
it sounds divine!
is it possible to have the same recipes but instead of sugar maple syrup and other sort of flour (i follow gluten and sugar free diet – due allergy) but i like to enjoy those great recipes.
