Brownies: Moist, Gooey, and Irresistible!

Vegan Brownies
1 cup unsweetened applesauce
1/2 cup raw sugar
1 teaspoon vanilla
3/4 cup unbleached flour
1/3 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semisweet vegan chocolate chips
1/3 cup walnuts (optional)
1 dash cinnamon (optional)

Preheat oven to 350 degrees. Lightly spray or oil and 8 X 8 baking pan. Mix applesauce, sugar, and vanilla in medium bowl. In another bowl, mix flour, cocoa, baking powder, baking soda, and salt (and cinnamon if desired).

Make a well in the center of the dry ingredients and add applesauce mixture. Mix until just combined; gently fold in chocolate chips (and walnuts if using). Spread in prepared pan and bake 25 to 30 minutes until center is firm, not sticky. Cool.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
