Pork-Potato Casserole

Pork-Potato Casserole

Ingredients

4 raw potatoes, sliced

4 medium onions, sliced

1 teaspoon salt

1/4 cup flour

1/4 teaspoon black pepper

2 cups milk, scalded

2 tablespoons butter, in small pieces

2 tomatoes, sliced

1 cup diced, cooked pork

1/4 cup fine buttered bread crumbs

Directions

Place 1/2 the potatoes in a 2 quart buttered casserole and add 1/2 the seasonings, butter, cooked pork, and onions and sprinkle with 1/2 flour. Repeat. Then add hot milk and finally the tomatoes. Sprinkle top with bread crumbs. Bake in a moderate oven (350 F) for 1 1/2 hours.

Makes 4 servings.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
