Potato Latke Recipe

Potato Latke Recipe

Ingredients

2 cups grated raw potatoes

2 tablespoons Matzo meal or flour

2 eggs, well beaten

2 cups oil for frying

1 yellow onion (medium) finely chopped

2 teaspoons salt

1/4 teaspoon pepper (optional)

 

Directions

Wash, peel and grate potatoes by hand or food processor. Put grated potatoes in a kitchen towel and squeeze out excess moisture. Add eggs, onion, salt & pepper. Mix well. If batter is too thin add matzo meal or flour. Let mixture stand for 5-10 minutes before cooking. Drop potato mixture into hot oil forming small thin cakes. Fry until golden brown on both sides. Remove and drain on paper towels.

Serve immediately (with applesauce and sour cream).

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
