Low Country Boil

Low Country Boil

Ingredients

Salt and Old Bay seasoning

18 small red potatoes

1 doz. medium peeled white onions

2 lbs. Polish sausage cut into 1&1/2” chunks

1 doz. ears corn cut into 2” chunks

4-5 lbs. raw shrimp in shell

Directions

Season a large pot of boiling water with salt and Old Bay seasoning to taste. Then add:

Red potatoes. Boil 6 minutes.

Add onions. Boil 2 minutes.

Add Polish sausage and corn. Boil 12 minutes.

Add shrimp. Boil 2 minutes.

Drain off water.

 

Cover table with newspapers.

Pour pot contents into center of table.

Add Old Bay seasoning to taste.

Use paper plates, forks and fingers.

Serve with corn bread, beer, and white wine.

 

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
