Macaroni and Cheese

Macaroni and Cheese

Ingredients

Macaroni

1/2 lb. macaroni
2 qts. Boiling water
2 teaspoons salt
1-cup cold water

White Sauce:

2 tablespoons butter
2 tablespoons flour
1/8-teaspoon pepper
1/4 teaspoon salt
1 cup hot milk or cream
1 cup grated cheese
Bread or cracker crumbs

Directions

Drop macaroni into the boiling water with salt. Boil for 20 to 25 minutes or until tender. Drain in colander and pour cold water through it. Butter a baking dish, put in a layer of macaroni, a layer of sauce and a layer of cheese. Repeat steps ending with cheese on top. Dust top with sifted bread or cracker crumbs and dot with butter. (optional) Bake for 15 mins or until cheese melts.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
