Blackberry Pie

Blackberry Pie

Ingredients

1 quart blackberries, washed and drained
¾ cup water
1 cup sugar
3 tablespoons cornstarch
1 tablespoon butter
1/8 teaspoon salt
Baked 9" pie shell

Directions

Mash 1 cup of berries. Put them in a saucepan, add ¾ cup water and cook four minutes. Mix sugar and cornstarch and add to water and berries. Cook until thick and clear, stirring frequently. Add lemon juice, butter and salt. Stir to mix. Let mixture cool. Arrange whole berries in pie shell. Pour cooled mixture over whole berries. Refrigerate until chilled. Top with whipped cream or vanilla ice cream, if desired.

If you notice a hole in the upper left-hand corner of your Farmers' Almanac, don't return it to the store! That hole isn't a defect; it's a part of history. Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
