Ingredients:
1 cup dry black-eyed peas
4 thick slices bacon, cut into small pieces
1 cup chopped onion
1/2 cup chopped green pepper
1 teaspoon salt
1 bay leaf
1 dash each of cayenne & black pepper
3 cups cooked rice
Directions:
Wash peas, then cover with 5 cups water. Boil 2 minutes. Remove from heat and soak overnight. Rinse and drain thoroughly. Cook bacon in heavy pan until browned. Add onion and green pepper. Sauté until onion is tender. Add beans, 2 cups water, and seasonings. Cover and simmer 40 to 50 minutes or until peas are tender. Remove bay leaf; stir in rice. Continue simmering about 10 minutes until all liquid has been absorbed. Serves 4 to 6.

Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
