Ingredients:
4 16-oz. porterhouse steaks
Salt
Freshly ground pepper
3 tbsp. vegetable oil
1 cup red onion, diced
1 large tomato, diced
3 cloves garlic, minced
1/4 cup apple cider vinegar
1/4 cup fresh cilantro, chopped
Directions:
Preheat oven to 475°F. Season each steak on both sides with salt and pepper. Heat the oil in a large saucepan over high heat, up to the just smoking point (based on the size of your pan, you may want to do one steak at a time). Using a pair of tongs, carefully place the steaks in the pan and sear for 3 minutes on one side. Turn over and add the onion, tomato, and garlic. Sauté for 3–4 minutes. Add the vinegar and cilantro and continue to cook for 3 more minutes. Transfer to a large baking pan, and pour the vegetable mixture on top of the steaks. Place in the oven and cook until it reaches the desired temperature (medium rare takes about 7 minutes).
