Ingredients:
4 cups kumquats, chopped, and seeded
1 cup of water
2 cups of sugar
Directions:
Heat the water and sugar over high heat until it comes to a boil. Simmer for 4 minutes. Add the kumquats and simmer for another 10 minutes. Drain the kumquats through a colander set over a bowl to capture the syrup. Return the syrup to the pan and simmer for another 5 minutes to further reduce it. Combine the kumquats and 1/4 cup of the syrup together and allow to cool.

Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
