Ingredients:
1/2 pound mushrooms
1/4 cup milk
3 tablespoons butter
3 scallions, chopped
1/2 dozen eggs, beaten
Directions:
Carefully clean mushrooms with a damp paper towel and cut them in half, lengthwise. In a large skillet, melt the butter over medium heat. Add the mushrooms and scallions and cook until the mushrooms are slightly browned. While the mushrooms are cooking, beat the eggs and the milk together. Pour the egg mixture over the browned mushrooms and scallions. Scramble together until the eggs are fully cooked.

Starting with the first edition of the Farmers' Almanac in 1818, readers used to nail holes into the corners to hang it up in their homes, barns, and outhouses (to provide both reading material and toilet paper). In 1910, the Almanac's publishers began pre-drilling holes in the corners to make it even easier for readers to keep all of that invaluable information (and paper) handy.
