My dad takes his favorite jar of beets and uses the juice added to fresh boiled egg in a large sealed jar. Eat within 2 weeks. I tried it with bread and butter pickle brine and it was really good. Warning..the vinegar will cause the eggs to tighten and harden up so I would recommend adding 25% water. Let me know if you try either of those recipes.
