I’ve been making a wonderful vegetable pizza lately that is quick,delicious and addicting!
I make the pizza crust:
3/4 c warm water
1 pkg quick acting yeast
1/4 t. sugar
1 3/4 c all purpose flour
1/2 t. salt
1 T.garlic,minced (from the garden)
Homemade pesto (basil & garlic from my garden)
Tomatoes (from the garden)
Mushrooms,sautéed in olive oil
zucchini (from the garden),sautéed in olive oil
Preheat oven to 500 degrees.Combine yeast,sugar and warm water,mix.Let sit eight mins. Mix flour and salt,add liquids and garlic and stir well.Knead 2 mins.Divide in half. Roll out to the thickness you like.( I love thin crust pizza) Spray or grease cookie sheet or pizza pan with olive oil. Optional:sprinkle with cornmeal.Place the pizza dough in pan,spread with pesto,tomatoes,season tomatoes with salt,pepper and oregano.Add zucchini,mushrooms and garlic. Sprinkle with cheeses,add a little olive oil,salt and pepper to taste. Bake about 10 mins until crust is lighly brown and toppings are bubbling.
You can top the pizza with anything you like,these are my favorites.
