Our first Farmers'
Almanac Fridge recipe:
Rotisserie Chicken (made easy)
Crock Pot
Tin foil (to make 6 foil balls)
1 Whole chicken (cleaned)
Seasoning of choice (for flavor)
Lawry's seasoned salt
Roll tin foil pieces into balls -- dull side out -- (make them kind
of flat and 1-2 inches thick -- just to keep chicken off the bottom
of the crock pot out of the drippings.) Arrange them in the bottom
of the crock pot (five around edge and one in the center).
Rub in seasoning and sprinkle Lawry's seasoned salt on chicken. Place
seasoned chicken in the crock pot -- breast side down. This allows
the juices to drip through the breast and not get dried out. Turn
crock pot on high, cook on high for 5-6 hours until the internal
temperature on the thigh or breast reaches 180 degrees. Use caution
when removing from crock pot, as the chicken will be very tender
and should fall apart upon removal.
Serve with potatoes and green beans or corn (or your own favorites).
