Back-To-School Breakfast Fun!
With kids heading back to school, you may be dreading the morning madness of getting everyone out the door. But in all the frenzy, don’t forget to allow time for the most important meal of the day. Eating breakfast will not only help your children do better in school, it can also be a fun way to begin the day. Let your kids help make these quick and easy breakfast recipes!Banana Dog
Whole-grain hot dog bun
Peanut butter
Wheat germ or sunflower seeds
Banana
Jam
Spread peanut butter on whole-grain hot dog bun and sprinkle with wheat germ or sunflower seeds. Top with whole, peeled banana. Squeeze a squiggle of jam on top of banana. For a Banana Burrito, use a tortilla instead of the hot dog bun. Makes 1 serving.
Egg in a Nest
1 egg
1 slice of bread
1 tablespoon butter
Crack egg into bowl and set aside. Using a 3-inch cookie cutter (circle, heart, star, or flower), cut a shape out of center of bread. Melt butter in frying pan over medium heat. Place bread in pan and fry lightly on one side (you can also fry cutout shape). Flip bread over and reduce heat to low. Carefully pour egg into cut-out hole in middle of bread. Cover pan and cook for 2-3 minutes or until egg has set in the bread "nest." For an over-easy egg, flip egg and bread and cook on the other side.
Breakfast Yogurt Parfait
24 ounces yogurt (any flavor)
1 cup fresh berries
1 cup granola cereal
Whipped topping (optional)
Spoon yogurt into chilled dessert cups or dishes. Place berries on top of yogurt and sprinkle with granola. Top with a spoonful of whipped topping, if desired. Chill or serve immediately. Makes 4 servings.
Breakfast Pocket
1 slice of bacon or 1 link sausage
2 eggs
1 slice American cheese
1 pita bread
Dice bacon or sausage and brown in frying pan. Add eggs to pan and scramble. Turn off heat. Add cheese and allow to melt. Heat pita bread in microwave for 15 seconds. Open up the pocket and fill with scrambled egg mixture. Makes 1 serving.
Orange Shake
1 cup orange juice
1/2 cup skim milk
1 teaspoon sugar
1/4 teaspoon vanilla extract
Place all ingredients in a blender and process until smooth. Pour into glasses. Makes 2 servings.
