Choosing Bakeware

bakewareWhen shopping for bakeware for the first time, it’s easy to feel overwhelmed by the sheer variety of pans on the market.

What are all of the different shapes and sizes for, anyway? What materials and surfaces will work best for your needs? What features should you look for?

Bakeware is generally functional rather than decorative, so having a matched set isn't important. You should buy pieces according to what you like to bake. By mixing and matching your bakeware piece by piece, you can create a truly personalized collection. Whether you're just learning to bake or are a seasoned home chef, the following tips can make purchasing bakeware less daunting:

  • Shape – Bakeware comes in a variety of shapes and sizes, some designed for particular recipes. Learn to recognize which pieces are best suited to the kinds of baking you do most.
  • Material issues – Baking equipment comes in a range of materials, from glass to copper to cast-iron, and all possess distinct properties. The more common materials are non-stick steel, tinplate, vitreous enamel, glass, and silicone plastic. Research the benefits and drawbacks of each before making a decision.

Other important features – A nonstick surface is often a good idea. Some higher-end pans are as attractive as they are functional, allowing you to choose a surface color that pleases you. Try different types of handles and grips, to see which ones are most comfortable for you.
Always buy quality – Whether you’re a culinary whiz, or have trouble boiling water, it’s a good idea to purchase the best-quality bakeware you can possibly afford. Not only will it last longer, it can also have an impact on the outcome of your recipes.

Will you use it? – Personal preference counts for a lot when choosing cooking equipment. The pan that best suits your needs is the one you most like working with. Getting a feel for the types of equipment you prefer may take time.

Essential Accessories – As with larger pieces, the best accessories will vary from kitchen to kitchen. Some standbys to consider include wire cooling racks, parchment paper, and silicone baking liners.
