Exploring Different Varieties of Honey

Honey is a pure, natural sweetener prepared by bees using nectar collected from flowers. Honey has many unique flavors, taking both its flavor and color characteristics from the flowers from which it was produced.
Honey can be used in diverse ways -- from baked goods, to a bread or cereal topping, to a glaze for meat, or a sweetener for tea and coffee.
Honey is easy on the stomach, adapts to all cooking processes, and has an indefinite shelf-life.
There are over 300 unique flavors of honey in the U.S., including the following:
* Clover
* Basswood
* Buckwheat
* Avocado
* Heather
* Leatherwood
* Eucalyptus
* Pine Tree
* Tupelo
* Sourwood
* Blueberry
* Blacksage
* Sunflower
Flavors vary from very mild to strong and pungent. Colors range from dark brown to colorless. As a rule of thumb, light-colored honey is milder in taste and dark-colored honey is stronger.
