Sauerkraut Surprise Cake

Ingredients:
Cake
½ cup butter or margarine1½ cups white sugar3 eggs1 tsp. vanilla extract2 cups all-purpose flour1 tsp. baking powder1 tsp. baking soda½ tsp. salt½ cup unsweetened cocoa powder1 cup water1 cup sauerkraut, very finely choppedSour Cream Chocolate Frosting-16 oz. semisweet chocolate chips4 tbsp. butter or margarine½ cup sour cream1 tsp. vanilla¼ tsp. salt2¾ cups confectioners’ sugar
Instructions
Cake- Grease and flour one 9 X 13 cake pan. In a large mixing bowl, cream the butter or margarine and sugar until light. Beat in eggs, one at a time, then add vanilla. Sift together flour, baking powder, baking soda, salt, and cocoa powder. Add to creamed mixture, alternating with water, and beating after each addition. Stir in sauerkraut. Pour batter into prepared pan. Bake at 350 degrees for 35 to 40 minutes. Let cake cool in pan. Frost with Sour Cream Chocolate Frosting. Cut into squares to serve. Sour Cream Chocolate Frosting Melt the semisweet chocolate pieces and butter or margarine over low heat. Remove from heat. Blend in the sour cream, vanilla, and salt. Gradually add enough sifted confectioners sugar to make frosting spreadable. Beat well. Spread over cooled cake.
