Boula Boula Soup

Green Peas                                     Sherry

Sugar                                             Sweet butter

Tarragon                                         White pepper and salt

Canned green turtle soup                 Whipped cream


Cook 2 cups shelled peas or frozen with 1/2 teaspoon sugar and a touch of tarragon until tender. Put through a fine sieve or into an electric blender to make a puree. Mix with 2 cups turtle soup and 1/2 cup sherry. Add 2 tablespoons sweet butter, a little white pepper and salt to taste. Heat, but do not boil. At serving time, ladle the hot soup into individual heatproofs cuts and top each with a spoonful of unsweetened whipped cream. Place under the broiler until the tip is delicately brown. Serve at once. Serves 6.
