Score the fat edges so the meat won't curl. Sear ham in a hot skillet, in butter. Add onion, raisins, orange peel and water. Cover and simmer over low heat for 1 to 1 1/2 hours, depending on whether ham is precooked or not. Make a smooth blend of the flour and orange juice, add Worcestershire sauce and pour over the ham. Cook 5 minutes longer, while stirring.
Braised Slice Of Ham
1 center slice of smoked ham, about 1 1/2” thick
1 tbsp. butter
1 medium onion, diced
2 tbsp. seedless raisins
6 strips orange peel
1 cup water
1 tbsp. flour
1/2 cup orange juice
1/2 tsp. Worcestershire sauce
