Buttermilk Fried Chicken

2 fryers, cut into serving pieces

2 c. all-purpose flour

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1/2 tsp. salt

1/4 tsp. pepper

3 c. buttermilk

Oil (for deep frying)


Put flour, baking powder, baking soda, salt and pepper in a sack and shake well. Dip each piece of chicken in buttermilk, then place it in the flour mixture in the sack. Shake well so that the chicken is completely covered with the flour mixture. Drop the chicken pieces into hot oil and fry until golden brown.
