Candied Cherries

1 lb. fresh cherries
1 lb. sugar
1-cup water


Boil sugar and water until the sugar spins a thread. Add cherries, pitted, let come to a boil. Let cool. Lift cherries with perforated spoon to platter. Boil syrup 5 minutes; pour over cherries, Cover with glass or cheesecloth, set in sunny area. Allow cherries to dry, turn into a clean cloth spread over wire cake rack. Dry. Store in glass jars.
