Preheat oven to 375. Combine first 4 ingredients and 2 cups of cheese. I add a little of the sauce. Place large scoop of filling in center of tortillas. Roll up and place in 2 9x9 pans side by side. Cover with remaining cheese and cover with enchilada sauce. Bake, uncovered for 20-30 minutes. Enjoy! Better flavor when warmed up. Can be frozen.
Cheesy Chicken Enchiladas
3 cups cubed chicken (cooked)
Or
1lb-browned Hamburger
2 cups (1 pt.) sour cream
1 cup chopped green onions
1/2 tsp. salt ( if you want)
4 cups (1 lb) shredded Monterey jack cheese
Or
3c. Kraft Colby /Mont Jack
1 c. Cheddar Cheese
1 (19 oz) can mild Old El Paso enchilada sauce mix
1 can Cream of Mushroom Soup
