Chicken Cacciatore

3 to 4 lbs. chicken peices

1/2 cup olive oil

1/2 cup chopped onion

3 cloves garlic, diced

1 (3oz) can tomato paste

1 can water

1 (No. 2) can Italian-style tomatoes

1 cup mushrooms pieces and stems

1/2 tsp. oregano

1/2 tsp. salt

1/4 tsp. pepper 

1 tsp. sugar 


Heat olive oil in a large skillet and in it saute' the chicken peices until they are done. Remove the chicken from the oil and set aside. Cook the onion and garlic in the remaining hot olive oil until the onion is transparent. Drain off any excess oil. Add tomato paste, water, tomatoes (liquid also), mushrooms, oregano, salt, pepper and sugar. Bring to a boil and cook for 5 minutes. Add the chicken, cover and cook for 30 minutes longer at low temperature. Serve with spaghetti or egg noodles. Sprinkle with Parmesan cheese.
