Chow Chow
1 peck (12 1/2 lbs) green tomatoes
1 tablespoon allspice
8 large onions
1/4 teaspoon ground cloves
10 green bell peppers
3 tablespoons dry mustard
3 tablespoons salt
Few Bay leaves
6 hot peppers, chopped
1 3/4 cup sugar
1 quart vinegar
1/2 cup horseradish (opt)
1 tablespoon cinnamon
Chop tomatoes, peppers and onions and mix together. Cover with salt and let stand overnight. Drain and add hot peppers, vinegar, spices (tied in cheesecloth bag) and sugar. Boil slowly for 15 minutes. Add horseradish. Pack in sterilized jars to within 1/2 inch of top. Put lids on firmly tight. Process in boiling water bath for 10 minutes.
