Country Potato Pudding

6 medium potatoes
½ cup hot milk
1 bouillon cube
4 tablespoons butter
1 teaspoon onion salt
1/8 teaspoon pepper
2 eggs
paprika

 


Boil and mash potatoes. Add bouillon cube to hot milk and stir to dissolve. Pour into potatoes; add butter, salt, and pepper. Whip until fluffy. Beat eggs and add all but 1 teaspoon to potatoes. Whip thoroughly. Pile in a greased baking dish. Brush egg on top and sprinkle generously with paprika. Brown a few minutes in a moderate oven. 6 servings.
