1 cup sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg, beaten
3 tablespoons cooking oil
¾ cup orange juice
1 cup cranberries, chopped
Sift flour, sugar, baking powder, baking soda, and slat into a mixing bowl. Combine beaten egg, oil and orange juice; add to dry ingredients. Stir just enough to blend but do not beat. Add cranberries, nuts and rind. Spoon into a greased 9x5x 3 inch pan. Bake in 350 degree oven 50 minutes then test for doneness. Allow to cool 10 minutes before turning onto wire rack. When cool, wrap and store at least 12 hours before slicing.
