Cook potatoes in the butter for 3 minutes; season with salt, pepper and paprika. Blend in flour, milk and water, stir and cook slowly for 20 minutes. Dot with butter, sprinkle with chives and serve.
Creamed Sweet Potatoes
2 cups diced cold boiled sweet potatoes
3 tablespoons butter, melted
2 tablespoons flour
3/4 cup evaporated milk
1/4 cup water
1 tablespoon chopped chives
Salt and pepper
