Creamy Rice Pudding (Kugel)


1/2 cup uncooked rice

1/2 cups raisins

3 cups boiling water

2 eggs, slightly beaten

1 1/2 teaspoon salt

1 teaspoon vanilla or grated lemon rind

1/4 teaspoon nutmeg

1 teaspoon grated lemon rind

1 can (1 1/3 cups) sweetened condensed milk


Wash rice and put in top of double boiler. Add water and salt. Cover. Cook over rapidly boiling water until rice is tender, about 40 minutes. Add milk and raisins. Slowly add beaten eggs, stirring rapidly. Continue cooking for 15 minutes. Remove from heat. Add vanilla or lemon rind and nutmeg. Serve hot or cold.

Makes 8 servings
