¼ cup sugar
1/8 teaspoon salt
3 eggs
½ cup sugar
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground allspice
¾ cup walnuts, chopped
1 recipe cream cheese filling
Chop dates. Combine dates with water, sugar and salt in small sauce pan. Cook 4 minutes until thick. Cool to room temperature. Beat eggs in electric mixer at high speed for 5 minutes. Gradually beat in sugar. Fold in date mixture. Combine dry ingredients. Stir in gently. Spread in greased and floured 15 x 10 x 1 inch jelly roll pan. Top with chopped nuts. Bake in 375 degree F oven 12 to 15 minutes. Turn out onto towel sprinkled with confectioners' sugar. Roll cake and towel together starting at narrow end. Cool. Unroll and spread with Cream Cheese Filling. Roll up and chill.
Cream Cheese Filling
2 (3 oz.) packages cream cheese
½ cup butter
¾ teaspoon vanilla
1 cup sifted confectioners' sugar
Beat until creamy; cream cheese, butter, and vanilla. Add sugar and beat until light and smooth.
Date Nut Cake Roll
