Easy Almond Brittle

2 ½ cups sugar
1 cup blanched almonds, chopped
¼ teaspoon salt
1 teaspoon vanilla


Melt sugar in heavy pan over moderate heat until golden in color, stirring constantly. Remove from heat and stir in nuts, salt, and vanilla. Pour quickly into a buttered 9-inch square pan. Allow to harden then turn pan upside down and break candy into pieces.
