Eggplant Fritters

Peel, slice and boil a medium eggplant in a small amount of salted water until tender. Then mash until free from lumps as your best mashed potatoes. Mix in 1 beaten egg, 1/4 teaspoon salt, 2 teaspoons baking powder, 1 tablespoon sugar and enough flour to make a thick batter. Drop by the spoonfull into a hot frying pan where the butter sizzles. Brown on both sides and serve at once.
Makes 4-6 servings
