Fresh Apple Cake

1 c. turbinado sugar (or refined sugar)

1 c. brown sugar

3 c. all-purpose or whole-wheat pastry flour

1 t. baking soda

1 t. salt

1 t. ground cinnamon

1 t. vanilla extract

1 1/2 c. vegetable oil

3 c. fresh apple, chopped

2 eggs, beaten

1 c. raisins

1/2 c. sunflower seeds

1/2 c. pecan meal


Add the dry (first 6) ingredients to a bowl and stir to combine. Stir all the ingredients, dry and wet, in a casserole pan and spread out. The batter will be stiff. Bake for approximately 75 minutes at 275 degrees.
