2 eggs, beaten
Fresh Corn Loaf
2 cups fresh corn
¾ cup green pepper, chopped
1 cup fresh tomatoes, chopped
2 teaspoons salt
1 cup onion, chopped
1 cup yellow cornmeal (plain or self rising)
1/8 teaspoon cayenne pepper
1 cup grated cheddar cheese
Mix the above ingredients and wait a minute while you mix the following ingredients; then add to first bowl.
2 eggs, beaten
½ cup water
½ evaporated milk
Mix all together and pour in a 2 quart casserole pan. Bake at 350 to 375 degrees for about an hour.
