Lentil Soup

1 package of lentils

4 tbsp tomato sauce

1 medium onion, chopped

4 tbsp olive oil

Salt and pepper to taste

Small pasta

1.      Soak the lentils according to the directions on the package. Use the ratio of water to lentils as indicated in the directions.

2.      Bring water to boil in sauce pot. Add all the ingredients except the pasta.

3.      Simmer for 1½  hours.

4.      Add small pasta at the end. Continue simmering soup until pasta is al dente.

5.      Serve hot.

Notes:

           You can cook the pasta separate from the soup to avoid the starch from the pasta going into the soup.

        You can substitute rice for the pasta. Again, add the rice already cooked to the soup.
