Mashed Potato Refrigerator Rolls
1 cup mashed potatoes
1 cup butter
1 quart scalded milk (cooled)
1 cake yeast in 1/2 cup warm water
7 cups flour
1 cup sugar
1 teaspoon soda
2 teaspoons baking powder
2 teaspoons salt
6 or more additional cups flour
Combine potatoes, butter, milk, dissolved yeast, 7 cups flour, sugar, soda, baking powder, and salt. Let rise 2 hours. Add 6 cups flour or enough to make a stiff dough, and put in refrigerator in a covered container. As needed, shape into rolls, let rise until almost doubled, then bake. For hot rolls, use 400 degree oven for 10-12 minutes. For cinnamon rolls, bake at 350 degrees for 25 to 30 minutes. Makes 6 to 7 dozen dinner rolls.
