Mississippi Mud Pie
1 unbaked 9-inch pie shell
4 oz. (4 squares) semisweet chocolate
1/2 cup unsalted butter
3 eggs
3 tbsp. corn syrup
3/4 cup sugar
1 tsp. vanillaPreheat oven to 350. Set aside prepared pie shell. Melt chocolate and butter over low heat. Remove from heat. Beat eggs and stir in corn syrup, sugar, and vanilla. Add to chocolate mixture slowly, stirring constantly. Pour into pie shell. Bake in preheated oven about 35 minutes or until set. Serve warm topped with whipped or ice cream.
Yield - 6-8 servings
