Peaches Supreme

4 peaches
1 tablespoon water
1teaspoon sugar
1 pint vanilla ice cream
¼ cup broken pecans or almonds
cinnamon sauce

Dip peaches in boiling water, peel and slice in eighths. Simmer in a covered sauce pan with water and sugar until barely tender; cool. With slotted spoon, divide fruit into dessert glasses. Top with a portion of ice cream. Pour a generous spoonful of Cinnamon Sauce over the dessert and add a sprinkle of nuts.

 

Cinnamon Sauce
1 cup sugar
½ cup corn syrup
¼ cup water
1 teaspoon cinnamon
½ teaspoon vanilla
1 cup undiluted evaporated milk
Place sugar, corn syrup, water, and cinnamon in a heavy sauce pan. Boil syrup until it starts to thicken, stirring constantly. Remove from heat to cool slightly. Add vanilla and milk; stir in very slowly. About 1 ½ cups.
Extra sauce can be sued in combinations of whipped cream and ginger bread, bland puddings, stewed pears, etc.
