Mix sugar, cream of tartar and water. Boil at 238 degrees (soft ball state). Remove from fire and let cool without stirring. When cool add peppermint. Beat until creamy. Drop from tip of a spoon onto wax paper. For other flavors use lemon, orange, wintergreen, clove or other extracts.
Peppermint Patties
2 cups sugar
3/4 cup water
1/4 teaspoon cream of tartar
6 drops peppermint extract
