1/4 teaspoon salt
2 eggs
1 cup milk (scant)
1 tablespoon shortening, melted
Mix and sift flour and salt. Beat eggs; add milk and melted shortening. Add liquid mixture gradually to dry ingredients. Beat with electric mixer until batter is completely smooth. Pour into well oiled muffing pans filling 1/3 full or 8 greased custard cups set on a cookie sheet. Bake in a preheated 450 degree F and bake 15 minutes.
Turn off oven. Poke the tip of a knife in each one and allow to remain in oven and extra 5 minutes.
