Pumpkin-Banana Pancakes

Dry Ingredients:

1 1/2 c. flour

1 3/4 t. baking powder

3/4 t. cinnamon

1/2 t. baking soda

1/2 t. salt

1/8 t. ground ginger

2 T. brown sugar

Wet Ingredients:

1 T. oil

1 1/4 c. buttermilk

2 eggs, beaten

1/4 c. pumpkin

1/2 c. mashed overripe banana


Thoroughly mix all of the dry ingredients. Then add the wet ingredients, whick have been combined thoroughly, and mix until smooth. Fry the pancakes on a lightly oiled, hot griddle or pan. Serve with maple syrup. Yield: 1 dozen 4" to 5" pancakes.
