1 large onion, cut in thin, half-slices
11⁄2 cups zucchini, in 1⁄4-inch slices
1 (15 oz.) can stewed tomatoes
1⁄4 cup Parmesan cheese, grated
Salt and pepper to taste
In a heavy skillet, melt the butter, and saute the onions until just transparent. Add the zucchini and saute for another 5 minutes. Add tomatoes and cook for an additional 5 minutes. Cover the skillet, reduce heat to low, and simmer for 10 minutes. Add salt and pepper to taste. Place in a serving dish and sprinkle with Parmesan cheese.
