Rice Turkey Salad

 

1 cup long grain rice, cooked

Left over turkey, cut up into bite size pieces

1 clove garlic, finely chopped

4 tbsp olive oil

Carrots, celery, finely chopped

6 gherkins, sliced

Red kidney and cece beans

Fontina cheese, cubed

Salt and pepper to taste

 


Preparation

  1. Place rice in salad bowl. The rice should be at room temperature.
  2. Mix in all the ingredients. Toss well. Taste and adjust seasonings.

 

Notes

  • As you can see there are many possible variations for a rice salad. Use your imagination and whatever you are trying to get rid of in your refrigerator or pantry
