Rice Turkey Salad
1 cup long grain rice, cooked
Left over turkey, cut up into bite size pieces
1 clove garlic, finely chopped
4 tbsp olive oil
Carrots, celery, finely chopped
6 gherkins, sliced
Red kidney and cece beans
Fontina cheese, cubed
Salt and pepper to taste
Preparation
- Place rice in salad bowl. The rice should be at room temperature.
- Mix in all the ingredients. Toss well. Taste and adjust seasonings.
Notes
- As you can see there are many possible variations for a rice salad. Use your imagination and whatever you are trying to get rid of in your refrigerator or pantry
