Roast Pork Loin

1 (4 to 5-lb) pork loin roast

3 cloves garlic, crushed

3 T. olive oil

2 teaspoons chopped fresh thyme

2 teaspoons chopped fresh rosemary

1/2 teaspoon salt

1/2 teaspoon pepper


Trim excess fat. Place on a rack in a roasting pan. Rub garlic over roast. Brush with olive oil and sprinkle with herbs. Cover roast and refrigerate for at least 2 hours. sprinkle raost with salt and pepper. Bake at 500 for 15 minutes. Reduce heat to 325 and bake for 1 hour and 20 minutes.
