Saute' onion, pepper and garlic in the fat for 10 minutes. Add salt, chili powder, tomato paste and water. Simmer and stir for 10 minutes more. Add shrimp to the sauce, cook for 5 minutes longer. Serve on hot rice.
Shrimp Creole

1/2 medium onion
1 teaspoon salt
1/2 cup chopped green pepper
1/4 teaspoon chili powder
1 clove garlic, diced finely
1- 8oz can tomato paste
1/4 cup clear bacon fat
1/2 cup water
1 cup raw shrimp
Saute' onion, pepper and garlic in the fat for 10 minutes. Add salt, chili powder, tomato paste and water. Simmer and stir for 10 minutes more. Add shrimp to the sauce, cook for 5 minutes longer. Serve on hot rice.
