Southern Fried Chicken Patties

1/2 cup butter

2 1/4 cup milk

1/2 cup crackers

1/2 teaspoon onion salt

1 egg

1 Tablespoon Velveeta cheese, sliced

1/2 cup flour

2 cups cooked, boned chicken, chopped

1 tablespoon chopped parsley

Pepper to taste

Garlic to taste

1 cup finley rolled crackers


Make a cream sauce with the butter, flour and 1 3/4 cups milk. Combine chicken, 1/2 cup cracker crumbs, parsley, seasonings, egg and 1 cup of the sauce. Chill. Shape into 8 patties, Roll in cracker crumbs. Fry in hot oil at 375 until golden brown. Blend 1/2 cup milk with remaining sauce; heat. Add cheese slices and stir until melted. Pour over patties until slighlty brown and melted (cheese may be omitted) as topping.
