Spanish Eggs
1 clove garlic
6 eggs, well beaten
2 tablespoons butter
Pinch of basil
1 tomato, peeled and chopped
1 teaspoon salt
1/4 teaspoon pepper
3 drops Tabasco
Rub the bottom of the frying pan with the garlic, add butter. When butter is melted, add tomato and cook for 5 minutes, stirring often to prevent sticking. Add eggs and seasonings. Reduce heat, cook and stir until eggs are cooked throughout, but still moist. Serve piping hot.
Makes 4-6 servings
