Spinach Balls

spinach

2 packages frozen chopped spinach

3/4 cup melted margarine

3 cups herb stuffing mix

1/2 cup grated Parmesan cheese

1/2 cup onion, chopped fine

1/2 teaspoon garlic powder

6 eggs, well beaten

1/2 teaspoon thyme


Cook spinach according to package directions; remove liquid and squeeze well. Combine cooked spinach with remaining ingredients and mix well. Let stand for 15 to 20 minutes. Dough will be soft. Make small balls about 1 inch in diameter and place on lightly greased cookie sheet. Bake at 325 degrees for 15 to 20 minutes. Serve warm or cool. Makes about 10 dozen.
